Since I’ve talked to you for quite awhile now on lots of ways to live healthy, I thought I would start sharing recipes with you. My kids and I have these Pepperoni Roll-Ups for lunch whenever we’re on vacation from school. The recipe is quick and easy to make – it takes me half an hour or less to make it (I did pause to take pictures, so it’s probably less).
You only need 5 ingredients to make these Pepperoni Roll-Ups! I adapted the recipe to make it healthy, like I talk about in my post, 14 Ways to Adapt Existing Recipes to be Heart Healthy. I used reduced fat crescent rolls (instead of regular), turkey pepperoni (instead of regular), low-fat mozzarella shredded cheese (instead of string cheese), Italian seasoning, and garlic powder (instead of garlic salt).

First, unroll the crescent dough and separate into 8 triangles. I put them on wax paper so they’re easier to roll up and remove when I transfer to a baking sheet.
Cut the pepperoni into quarters. I found the easiest way to do this is to make two piles of 8 pepperoni each. Then, I just quarter each pile and I end up with the eight pieces I need for each triangle, in each pile.
Now put eight pieces of pepperoni on the crescent rolls. This is easy to do and you can even have your kids help you!
Now put the shredded cheese on it. I didn’t measure it out, I just sprinkled some on. My sons like less cheese than my daughter and I do, so I put less on their roll-ups, and more on ours.
Add Italian seasoning. I started to sprinkle on the Italian seasoning from the 1/2 teaspoon, but found out it was easier to just sprinkle some on directly from the seasoning container.
Then, roll them up starting from the long side. See, most of them rolled up pretty easy from the wax paper; only 1 stuck a tiny bit. Once they’re rolled up, sprinkle with a little more Italian seasoning and some garlic powder.
I transferred them to a baking sheet that had been sprayed with canola cooking spray.
Here’s the baked pepperoni roll-ups, only 12 minutes later!

There you have it! A really healthy lunch; a fun summer lunch for you and your kids to enjoy. Since the baking time is only 12 minutes, it doesn’t even heat up your house. I had my pepperoni roll-up with veggie chips and cantaloupe, which of course I bought on sale!

- 1 tube reduced fat refrigerated crescent rolls
- 16 slices turkey pepperoni cut into quarters
- 2 pieces string cheese (1 ounce each) cut into quarters
- 3/4 tsp Italian seasoning divided
- 1/8 tsp garlic powder

Place eight pepperoni pieces on each triangle.

Place a piece of cheese on the long side of each triangle.

Sprinkle with 1/2 teaspoon Italian seasoning.

Roll up each triangle, starting with a long side.

Sprinkle with garlic powder and remaining Italian seasoning.

Place 2 inches apart on a baking sheet sprayed with cooking spray.

Bake at 375 degrees for 12 minutes or until golden brown.
I used shredded low fat mozzarella cheese instead of the string cheese because that's what I had on hand. I just sprinkled some on each triangle.
