Broccoli is a vegetable all 3 of my kids like, so I’m always on the lookout for recipes. My husband also really likes onions, so I look for a recipe that satisfies everyone. This broccoli recipe is perfect to satisfy everyone’s tastes. You should try it! You might be surprised to see your kids eating broccoli and actually liking it!
This Italian dressed broccoli recipe was originally from the Simple & Delicious magazine, but I changed it a little to meet our dietary needs. I do that to just about all of the recipes I use. You only need 8 ingredients to make this Italian dressed broccoli recipe! I buy broccoli when it’s on sale. It usually goes on sale every few weeks for $0.98/pound. I buy onions regularly, but I always look for what’s on sale. If no onions are on sale, I’ll just buy one or two. If they’re on sale, I’ll buy four. That way I have enough for a couple of weeks.
I always have margarine, Italian salad dressing, garlic powder, oregano, pepper, salt and parsley on hand. This broccoli recipe is really quick and easy to make. Depending on how long the main dish cooks for, depends on when I cut the broccoli. If the main dish takes an hour or more to cook, I will cut these up while the main dish is cooking. If it takes less than that to cook, I will cut everything first.
Broccoli is easy to cut. I, of course, rinse the broccoli first. Then, I slice off the end. Often, several pieces of broccoli are ready right then to put in the pot. Sometimes, the pieces that are left are still a little too big. So, I cut those in half before adding to the pot.
If you notice, the onion pieces are pretty big. This recipe calls for sliced onion. So, I just cut off a few slices of onion. Then, I just cut those slices in strips. Whatever size those turn out to be, I add them to the pan. The slices don’t need to be any exact size. It makes things much easier and faster that way.
Then, you add enough water to cover the vegetables. Boil for about 10 minutes or until the vegetables are tender. I check to see if they’re tender by sticking a fork in them. If the fork goes in easily, then I think they’re tender enough and they’re done. Then, you drain them.
You add in all the rest of the ingredients and stir them up. You cook them for about 2 minutes for the flavors to blend. That’s it! Your broccoli is cooked and ready to eat with your main dish.
This night, we had our broccoli served with chicken mushroom stew.
This meal makes enough for 2 nights, so the next night all we have to do is heat it up in the microwave. Everyone scoops out how much they want on their plate and we heat each plate up for about 2 minutes. In just about 10 minutes, dinner is ready the second night! Nice and easy!
A healthy, quick and easy vegetable side dish. Just a few simple ingredients that are easy to prepare. You'll have a delicious vegetable to go with any meal!
- 4 cups fresh broccoli florets
- 1 medium onion, halved and sliced
- 1/3 cup fat free Italian salad dressing
- 1 tbsp. maragarine
- 1/2 tsp. dried oregano
- 1/4 tsp. garlic powder
- 1/4 tsp. dried parsley flakes
- 1/4 tsp. salt
Bring broccoli, onion and water to a boil in a large pot.
Boil, covered, for about 10 minutes, or until tender; drain.
Add the rest of the ingredients
Cook and stir over medium heat for about 2 minutes, or until heated through.
